Broccoli salad, Marie-style (my mom)
1-2 bunches broccoli, chopped the way you like it
small red onion or 2 small shallots
2 tbsp apple cider vinegar with “the mother”
1 tbsp (or more) dijon mustard
4-6 tbsp extra virgin olive oil
shake of red pepper flake
1. Chop the red onion or shallots and place in a serving bowl with the vinegar and let sit for about 15 to 20 minutes. This will allow the onion to break down and not taste as strong.
2. When the onion has broken down, whisk in the mustard, red pepper flake, salt and pepper. Finally, whisk in the oil.
3. Steam the broccoli.
4. When broccoli is steamed to your liking, add to the bowl with the vinaigrette and combine.
5. Enjoy :)
