Cauliflower Tahini Soup




1 tablespoon coconut oil
1 medium onion, chopped
1 garlic clove, minced
1 head cauliflower, cut into florets
1/4 teaspoon 
salt and pepper, or to taste
5 cups water
2 tablespoons tahini
chopped almonds (optional)


1. Heat oil in a large pot over medium-low heat and sauté the onions until they are translucent, about 5 minutes; then add in the garlic and sauté about a minute until it's fragrant.

2. Add cauliflower, salt and water, bring to a boil, reduce heat and simmer 20-25 minutes until the cauliflower is fork-tender. 

3. Add the tahini.

4. With an immersion blender, puree the soup until smooth or transfer to a blender to puree. 

5. Top with almonds if you desire.
