Harvest Soup
Ingredients:
1 tbsp coconut oil
1 large onion, diced
2 to 3 garlic cloves, chopped
any spices you like (chili powder, ginger)
himalayan salt, sea salt or celtic salt
4 carrots
2 celery stalks
1 red skinned potato
fennel bulb 
broccoli stems, diced
Water to cover
Directions:
- In a soup pot, warm coconut oil
 - Add onions, spices and salt and sauté until onions are translucent
 - Add the other vegetables with enough water to cover
 - When vegetables are tender (approximately 15 minutes), puree with a hand blender
 - Cover and simmer for 10 minutes and serve
 
Notes: You can really play around with this recipe, by adding in what vegetables you like. I would just keep the onion, carrots and red skinned potato as a base.
