Harvest Soup


1 tbsp coconut oil
1 large onion, diced
2 to 3 garlic cloves, chopped
any spices you like (chili powder, ginger)
himalayan salt, sea salt or celtic salt
4 carrots
2 celery stalks
1 red skinned potato
fennel bulb 
broccoli stems, diced
Water to cover


  1. In a soup pot, warm coconut oil
  2. Add onions, spices and salt and sauté until onions are translucent
  3. Add the other vegetables with enough water to cover
  4. When vegetables are tender (approximately 15 minutes), puree with a hand blender
  5. Cover and simmer for 10 minutes and serve

Notes: You can really play around with this recipe, by adding in what vegetables you like. I would just keep the onion, carrots and red skinned potato as a base.
