Quinoa with Scallions


1 cup quinoa, rinsed
2 cups water
ginger tea bag (optional)
bunch of scallions, thinly sliced, white and green parts separated
1 tbsp olive oil
dark sesame oil
garlic powder


1. Put quinoa and water in a pot with about 1/2 to 1 tsp of salt and the tea bag if using one. Cover and bring to a boil, keeping an eye on the situation so nothing overflows.

2. Once boiling, add the sliced scallion whites. Return to a boil and reduce heat to medium/low. Cook for about 15 minutes.

3. After 15 minutes, make sure all the water is absorbed and turn off the heat. Let stand 5 minutes. (If the quiona sticks to the bottom of the pan slightly when the 15 minutes are over, letting it stand for 5 minutes will loosen things up).

4.  After 5 minutes, put quinoa in a bowl and add the olive oil, a very small drizzle of dark sesame oil and a sprinkling of garlic powder and mix. Add in the scallion greens. 

5. Serve and enjoy.
